A day marked provisional is still taking orders and will grow. Weekday lunch is typically only 55–70% booked five days out, so a short bar at that distance is normal; a short bar one day out is not.
The norm is a plain mean of the last few settled same weekdays, so it inherits whatever those weeks held. After a shutdown such as Ferragosto the norm is depressed and days will read far above it. The basis column below says how many weeks each norm rests on.
